Saint Louis style cut ribs sold frozen in vacuum-packages. Average weight: 2lb. Most are from our heritage-breed pigs (including Duroc, Hereford, Gloucester Old Spot, and Large Black) but we have several racks available from our Kunekune cross pigs. Kunekune pigs are a small breed from New Zealand, with spectacular marbling and high quality fat. We cross them with our heritage pigs for a balance of size, marbling and meat quality.
