ASPARAGUS WITH BLOOD ORANGE VINAIGRETTE

Ingredients

  • Juice from 1 blood orange 

  • 2 tablespoons minced shallot

  • 1 clove of garlic, minced

  • 1 tablespoon stone-ground mustard

  • 3 tablespoons white wine vinegar

  • ½ cup olive oil plus additional to sauté asparagus

  • 1 bunch asparagus, trimmed

  1. Put all the vinaigrette ingredients into a tightly capped jar. Shake vigorously.

  2. Heat olive oil in a cast iron pan over medium-high heat. Sauté the asparagus spears until tender. Serve drizzled with the vinaigrette. The vinaigrette is also an excellent dressing for a green salad.
