ASPARAGUS WITH BLOOD ORANGE VINAIGRETTE
Ingredients

Juice from 1 blood orange

2 tablespoons minced shallot

1 clove of garlic, minced

1 tablespoon stone-ground mustard

3 tablespoons white wine vinegar

½ cup olive oil plus additional to sauté asparagus

1 bunch asparagus, trimmed

Put all the vinaigrette ingredients into a tightly capped jar. Shake vigorously.

Heat olive oil in a cast iron pan over medium-high heat. Sauté the asparagus spears until tender. Serve drizzled with the vinaigrette. The vinaigrette is also an excellent dressing for a green salad.
