Corned Pork Shoulder

At Broad Arrow Farm, it seems only natural for us to celebrate Saint Patrick’s Day with corned pork in place of corned beef! It’s every bit as good; enjoy this recipe often rather than once a year. We like to make plenty so that we’ll have leftovers. The vegetables with the corned pork make a great hash for breakfast, or serve sliced corned pork in sandwiches with whole grain mustard. Don’t let the idea of making corned pork from scratch intimidate you. The pork shoulder steaks are brined for only 24 hours and then slow roasted with the vegetables.

Sauce Piquant with Cajun Meatballs

Sauce Piquant is a classic of New Orleans cuisine, sometimes also referred to as red gravy or creole sauce. Tomato based, with flavors built on a foundation of “trinity” (green peppers, celery, and onion), sauce piquant makes a great simmer sauce for spicy, tender meatballs. Feel free to adjust the heat of the recipe by adjusting the amount of cayenne in the spice mix!

Kielbasa with Roasted Winter Vegetables and Two Sauces

Kielbasa, wonderul in any season, makes an easy winter meal when cooked in the oven with vegetables such as beets, potatoes, carrots, and cabbage. We’ve added flair to the meal by whipping up two easy sauces to accompany the meat and vegetables. Gastrique, a sauce made by reducing sugar and vinegar, is great to keep on hand to drizzle over grilled meat, roasted vegetables, or even seafood. The second sauce, a curried tomato cream, is a combination of curried tomatoes and sour cream. The curried tomatoes are fabulous with eggs; if you have leftover vegetables, serve the eggs with winter vegetable hash.

Pork Roast with Red Wine Fig Sauce

This fig sauce pairs beautifully with any pork roast and would also be great with pork chops as it delivers sweet, salty, and umami flavors. We chose to make our fig sauce using a combination of three different dried fig varieties (Conadria, Black Mission, and Turkish) but you can use any fig variety that you prefer. Roasted squash is an excellent side dish.

Carnitas

Pork shoulder and Boston butt are fabulous cuts for this favorite dish. First braised with flavors including orange juice, lime juice, and cumin, and then crisped up in a pan, carnitas delivers satisfaction in every mouthful. We serve it with corn tortillas, cabbage slaw, and garnishes such as cilantro, lime juice, and queso blanco.

Braised Country-Style Ribs

Country-style ribs are a versatile pork cut, excellent whether seared, grilled, or braised. Technically these are not ribs at all but instead cut from the shoulder. In this recipe, they are slow-cooked in red wine with olives and capers. Hearty and absolutely delicious served over your choice of polenta, egg noodles, mashed potatoes, or served with warm garlic bread.

Pork and Apple Meatloaf

There is more ways to make meatloaf than the classic ground beef and ketchup! In this variation, we used ground pork and sausage, seasoned the mixture with grated apples and fresh herbs, and wrapped the freeform loaves up in Broad Arrow Farm bacon. We served it with macaroni and cheese and wilted mixed greens. The leftovers make great sandwiches.

Pork Chili

Featuring the flavors of poblano, green chili, corn flour, toasted cumin, and topped with a lime sour cream, this chili will have you going back for more! Our pork stew meat is the perfect cut for this hearty meal.

Cook's Note:
The recipe calls for corn flour, an ingredient that you may not already have in your pantry. Do not be tempted to substitute cornmeal (or white flour). The corn flour adds a unique flavor and thickens the chili beautifully

Lamb Stew with Paprika and wild mushrooms

You can subsitute lamb shoulder or leg steaks in this recipe, cutting the meat into stew-sized boneless chunks. Use the best quality paprika you can find. We like the stew made with half-sharp paprika, but sweet or sharp paprika will be wonderful, depending on how spicy you like your food! You can even use smoked paprika. You can also substitute any dried mushrooms for the Maine Wild Mix that we used.

Pork Chops with Cranberry herb Glaze

This recipe will help you cook your chop to perfection and then glaze it in a delicious homemade cranberry jam. Feel free to substitute any jam, especially when cranberries are no longer in season! You may want to make enough of the cranberry jam to have it on hand for toast, cheese, or as a sandwich spread.

Pork roast with mushroom cream sauce

While the recipe calls for a pork sirloin roast, any pork roast (shoulder, neck, butt, boneless…) will be delicious when served with this rich mushroom sauce. We used a spice mix made in Portland, Maine by Regina Spices. Any good quality spice rub may be substituted.

Sticky Ribs

Use any jam you like - we used a Maine-made red pepper jelly - to glaze these ribs! Cooked in the oven, these are simple to prepare and incredibly tasty! For side dishes, try warm potato salad and charred cabbage and lemon slaw. The leftovert potato salad makes great home fries.
